Sweet Potato Biscuits 

Adapted from Baking a Moment

  • 2 cups all-purpose flour

  • 1 tbs. baking powder

  • 1 tsp. kosher salt

  • 1 cup mashed roasted sweet potato, cold

  • 1/2 cup unsalted butter, cold

  • 1/4 cup buttermilk

Preheat the oven to 450°F, and prepare a baking sheet.

In a large bowl, mix together the flour, baking powder, and salt. Add the mashed sweet potato and butter, and cut in with a pastry blender. Stir in the buttermilk until the dough forms a ball, being careful not to overmix.

Turn the dough out onto a lightly floured surface, and pat it into a large disk, about 1½ inches thick. Working quickly, cut rounds with a 2-inch diameter cutter, and place on the prepared baking sheet. 

Bake for 12 to 16 minutes, or until puffed and golden brown on the bottom and around the edges.
