Sautéed Whole Garlic Scapes
1 lb garlic scapes, whole
2 tablespoons olive oil
Salt, to taste
Freshly ground black pepper, to taste
Heat a large pan or wok over medium high heat and add the oil. Wait until the pan gets hot and then add the garlic scapes. Sprinkle generously with salt and stir/toss (tongs are helpful here!) so that the scapes are coated in oil and salt. Cook, stirring frequently, until the garlic scapes are tender and beginning to brown in places. Add freshly ground black pepper to taste.
Eating whole garlic scapes can be a messy ordeal but it is worth it! Eat everything but the flower part of the scape, which can be tough. Plan to have napkins nearby!
