Sesame Cabbage Slaw

1 small cabbage, thinly sliced

2 cups shredded carrots

¼ cup toasted sesame oil

¼ cup lime juice

¼ cup rice vinegar

1 teaspoon salt

¼ cup sesame seeds

⅓ cup golden raisins

¼ chopped scallions

¼ cup chopped cilantro


Add the thinly sliced cabbage and shredded carrots to a large bowl. Drizzle in the toasted sesame oil, lime juice, rice vinegar, and salt and mix until everything is well-coated. Mix in the sesame seeds, golden raisins, scallions, and cilantro and toss to combine. Taste and add more sesame oil, lime juice, rice vinegar, and salt to taste. Let sit for 15 minutes before serving.
