Sweet and sour beets with cream cheese and fried pretzels

Recipe Adapted from Superiority Burger 

Serves 6

  • 1 lb. red beets

  • 2 cups red wine vinegar

  • 1/2 cup maple syrup

  • 1 cup pretzels, crushed into irregular pieces

  • 1/4 cup extra virgin olive oil

  • 1 cup cream cheese

  • 1/2 jalapeno, minced

  • fresh dill sprigs

Preheat the oven to 350 degrees.

Coat beets in a little bit of olive oil, place on a baking sheet, and cook until a fork can easily pierce the flesh- about 1 hour.

Meanwhile, whisk red wine vinegar, maple syrup, and salt to taste.

Once cooled, cut beets into medium chunks, and place in a medium-sized bowl. Toss with vinegar mixture, and let sit for at least 1 hour.

Combine pretzels with olive oil and fry in a saucepan over medium heat until rich golden brown.

Mix minced jalapeno and cream cheese together in a small bowl.

For each serving, scoop a little of the jalapeno cream cheese onto the bottom of a bowl. Place beets on top. Garnish with fried pretzels and fresh dill.
