Crispy potatoes in tomato sauce

  • 2 lbs potatoes, cut into 1-inch wedges

  • 1 onion, chopped

  • 4 tbs. extra virgin olive oil

  • 5 cloves garlic, minced

  • 1/2 tsp. dried oregano

  • 1 cup of tomato puree 

Heat olive oil in a medium sauce or cast iron pan. Saute onion on medium high heat until translucent, about 10 minutes.

Add potatoes, and cook for 10 more minutes or until potatoes are crispy brown.

Add minced garlic, dried oregano, and tomato puree. Cover and simmer until potatoes are tender.
