Spiced Beet & Carrot Salad

1 lb mixture of beets and carrots, grated (about 4 cups)

¼ cup olive oil

4 to 5 tablespoons orange juice, or one freshly juiced orange

½ teaspoon ground cumin

¼ teaspoon ground cinnamon

½ teaspoon paprika

¼ teaspoon cayenne

½ cup golden raisins

½ cup roughly chopped walnuts

1 teaspoon salt

¼ to ½ cup fresh parsley and/or mint and cilantro, chopped


Mix together grated beets & carrots with the rest of the ingredients. Cover and let marinate in the refrigerator for at least 1 hour or up to 2 days to allow the flavors to meld. Serve chilled or at room temperature.
