Black radish, carrot, apple, and mint salad

  • 1 lb. each black radishes + carrots - peeled and chopped into matchsticks 

  • 1 large tart apple - sliced thinly into matchsticks

  • 10 fresh mint leaves - sliced thinly

  • juice from half a lemon

  • 2 tbs. olive oil 

  • pinch of red pepper flakes (for optional zing)

  • 1/2 tsp. sumac powder or zaatar (optional)

  • sea salt + pepper 

Toss vegetables and apples together in a bowl with mint leaves. 

Drizzle with olive oil, fresh squeezed lemon juice, sumac/zaatar and red pepper flakes if using. 

Toss and season with salt and pepper to taste.
