Za'atar spiced beet dip
Makes 3 cups
6 medium beets
3 tbs. olive oil
2 small garlic cloves, minced
1 cup plain Greek yogurt
1 tbs. za'atar spice or some combination of oregano, thyme, sumac, and sesame seeds if you don't have za'atar on hand
salt to taste
crumbled goat cheese for serving if you please
Preheat the oven to 350 degrees.
Peel beets and cut into quarters.
Toss beets with olive oil, place on a roasting sheet, and bake for 25 minutes or until tender.
Once cooled, transfer to a blender and puree with garlic, yogurt, za'atar, and salt to taste.
Scrape into a wide, shallow bowl, top with goat cheese, and serve with warm bread or pita.
