Turnip gratin

Serves 6

  • 2 lbs. turnips, peeled and sliced very thinly

  • 2 cups heavy cream or half and half

  • 4 tbs. butter, cut into small chunks

  • 4 garlic cloves, minced

  • 1 tsp. dried thyme

  • 1-2 tsp. salt

  • 1/4 tsp. cayenne pepper

  • 1/4 tsp. nutmeg

  • 1 cup parmesan cheese 

Preheat the oven to 375 degrees. 

Put the cream or half and half in a small sauce pan with the thyme, cayenne, nutmeg, and garlic. Heat until just simmering, the turn off heat and let sit 5-10 minutes. 

Lightly grease a 9x13 baking dish with a little of the butter. Layer 1/3 of the turnips in the dish, sprinkle with salt and 1/3 of the cheese, and dot with 1/3 of the butter. Repeat twice more, until all the cheese, butter and turnips are used. 

Cover the dish with foil, place on a baking sheet, and bake for 40 minutes.  Remove the foil and bake 20 minutes more, until golden on top.  Let cool at least 10 minutes before serving.
