Savory turnip and carrot mash

You can also use potatoes in this recipe, instead of or in combination with the turnips and carrots.

Serves 6

  • 1.5 lbs turnips, peeled and cubed

  • 1.5 lbs carrots, scrubbed and cubed

  • 2-4 garlic cloves

  • 1 teaspoon salt

  • 1 cup cream or milk

  • 1/2 stick (4 tbs.)  butter

  • 1 large fresh thyme sprig, or 1 tsp. dried thyme

  • 1 large fresh rosemary sprig, or 1 tsp. dried rosemary

  • salt and freshly ground black pepper

  • 1 bunch fresh chives, chopped, optional

Put the vegetables, garlic and herb sprigs in a large pot and fill with water to cover; season with a teaspoon of salt. Bring to boil over medium heat and simmer for about 30 minutes, until the vegetables are very tender.

Drain vegetables, (removing woody herb stems) and put them into a large mixing bowl. Add the butter and the milk or cream, mash with a potato masher. Season with salt and pepper to taste, and garnish with chives if using.
