Honey ginger roasted carrots

These cozy carrots are great alongside steamed rice, a simple seared fish, or roasted chicken thighs.

Serves 4

  • 1 lb. carrots, peeled and roughly cut into 1-inch ovals

  • 1/4 cup honey

  • 1/4 cup olive oil or other neutral oil

  • 2 tablespoons grated fresh ginger (check out Old Friend’s Farm young ginger!)

  • 2 tablespoons soy sauce

  • A sprinkle of sesame seeds to finish 

  • Salt to taste

Preheat your oven to 350 degrees.

Toss peeled, cut carrots with honey, oil, ginger, and soy sauce in a bowl so that the carrots are evenly coated.

Roast in the oven for 25 minutes or until the carrots have a nice dark color and can be pierced with a fork.

Sprinkle with sesame seeds and serve warm.
