Miso-Sesame Glazed Carrots

2 lbs carrots, halved and cut into 4” lengths

1–2 tablespoons olive oil

½ teaspoon salt

2 tablespoon white miso

2 teaspoons toasted sesame oil

1 clove garlic, minced

1 teaspoon maple syrup

1 tablespoon rice vinegar

1 teaspoon sesame seeds, mix of black and white


Preheat oven to 400°F. Add carrot pieces to a large baking tray and toss with olive oil and salt. Roast until the carrots are tender, about 10–20 minutes. In a small bowl, stir together the miso, sesame oil, garlic, maple syrup, rice vinegar, and sesame seeds. Remove carrots from the oven and toss with the miso mixture. Bake for another 5 minutes, until the carrots look slightly carmelized, and serve!
