Coconut Mashed Sweet Potatoes
3 lbs sweet potatoes
½ cup coconut milk
1 teaspoon grated fresh ginger
½ teaspoon cardamom
1 tablespoon maple syrup
½ teaspoon salt
Freshly ground black pepper, to taste
Roast whole sweet potatoes in an oven at 375°F until the potatoes are tender when pierced with a fork, about 30–40 minutes. Remove from the oven and allow to cool slightly. When cool enough to touch, scoop out sweet potato flesh into a large bowl, discarding skins. Add the coconut milk, ginger, cardamom, maple syrup, salt, and pepper and mash everything together until well combined, adding more coconut milk as needed to reach your desired consistency.
