Catalan-style Spinach
3/4 lbs. spinach, washed and dried, chopped if leaves are large
1 small tart apple, peeled and cut into very small cubes
1/4 cup raisins (brown or golden, or a combination)
1/4 cup pine nuts (or sunflower seeds, pumpkin seeds, or slivered almonds)
2 tbs olive oil
2 cloves garlic, sliced thinly
coarse salt and black pepper
fresh squeezed lemon or orange juice to finish, optional
Heat the oil in a medium size skillet. When hot, saute the garlic, pine nuts (or other seeds/nuts) and raisins for 2-3 minutes over medium heat. Add the spinach and cook just until wilted. Add salt, pepper and juice (if using) to taste, serve immediately. Serves 2-3.
