Baked Sweet Pepper Rice
3 tablespoons butter, cut into small cubes
1 small onion, finely chopped
1 medium sweet pepper, finely chopped
2 tablespoons fresh oregano, finely chopped, or 2 teaspoons dried
½ teaspoon salt
1 garlic clove, minced, or ¼ teaspoon garlic powder
1⅓ cups long grain white rice
3 cups vegetable broth
Preheat oven to 350°F. Place all of the ingredients in a 9×13 pan and stir to combine. Cover with foil and bake for 60 minutes, stirring once halfway through.
The rice is ready when all the liquid has been absorbed and the rice is tender.
