Cucumber and potato salad

Might sound like a strange combination, but so good and refreshing!

Serves 4-6

  • 1 lb. small potatoes, cut into bite sized pieces

  • 1 lb. cucumbers, sliced into thin rounds or half moons

  • 1/4 cup fresh onion, diced

  • 2 celery stalks, cut in half lengthwise then thinly sliced

  • 2 hardboiled eggs, chopped- optional

  • 2 tbs. plain greek yogurt

  • 2 tbs. mayonnaise

  • 2 tsp. dijon mustard

  • 2 tsp. apple cider vinegar

  • 1 tsp. salt

  • 1 tsp. fresh ground black pepper

  • 1/4 cup chopped fresh herbs

In a large bowl, mix together the yogurt, mayonnaise, mustard, vinegar, salt and pepper. Add the chopped onion and celery. 

Place the potatoes in a saucepan with water to cover and bring to a boil. Simmer for 15-20 minutes, until soft. 

Drain and add to the yogurt mixture while still warm, stirring well to combine everything. 

Add the sliced cucumber, fresh herbs and egg if using.  Stir again. 

Let chill for 20-30 minutes, then taste and add more salt if needed.
