Cucumber Tzatziki
1 medium or 2 small cucumbers, grated and squeezed to remove excess moisture
1½ cups plain whole-milk Greek yogurt
1 tablespoon extra-virgin olive oil
¼ to ½ cup chopped fresh herbs: mint, dill, cilantro, and/or parsley
2 scallions, minced
1 clove garlic, minced
1 tablespoon lemon juice, plus more to taste
½ teaspoon salt, plus more to taste
Freshly ground black pepper, to taste.
Add the grated cucumber, yogurt, olive oil, herbs, scallions, garlic, lemon juice, and salt to a medium bowl, and stir to combine. Let the mixture rest for 5 minutes to allow the flavors to meld. Taste and add more lemon juice and salt as needed!
