Green Beans with Ginger and Garlic
2 tablespoons vegetable oil
1 pounds green beans, trimmed
1-inch piece fresh ginger, minced
2 garlic cloves, minced
Salt and pepper to taste
Heat oil in a wok or large skillet over high heat. Add the beans and a pinch of salt and cook, stirring constantly, until the beans turn bright green. Add in the ginger and garlic and cook for a few minutes more, stirring constantly, until fragrant. Add more salt and freshly ground black pepper to taste and serve!
